Binagoongan Verde

Every recipe has its own story. Every dish a kind of labor. Reward comes when people celebrate its flavor.

We made Binagoongan Verde different. We added green mango purée on top of our sautéed pork binagoongan. Different folks. Different strokes.

The idea of using green mango purée is an AHA moment. Coming from the green mango and bagoong combination. Pregnant women crave for it. School boys and girls buying from peddlers, sitting on sidewalks, eating it with their hands. Even those at home wait for passing vendors just to get it. Serving it at parties too. It seems that people are the same when it comes to eating. Green mango with bagoong is a craze by itself. We capitalize on it.

With Binagoongan Verde, we elevated the pleasure in eating the simple green mango and bagoong.

So much so that back in 2015, Binagoongan Verde was featured in a food blog. It was popular in the communities where we had our previous outlets, Rekado Atbp and Hermana. Both closed due to the pandemic. Our pork binagoongan got people curious. They came. They ordered.

You can say that Binagoongan Verde is a variation of the typical pork binagoongan. We played the cards. We won.

Now, we are bringing back Binagoongan Verde at 9001 Kitchen.

Where Can You Order The Most Unique Binagoongan?

This has got to be the most unique and most delicious binagoongan I’ve tried. They call this Binagoongang Verde. Verde is Spanish for green, and there’s a bright green (almost yellow) sauce on top of this dish making it extra special.

Their version awakened my palate’s sleeping passion for binagoongan. Theirs has crispy pork sauteed in shrimp paste (bagoong) topped with green mango purée. Yes! It’s the green mango purée that elevated my standards for binagoongan.

Many Filipinos enjoy eating green mangoes with bagoong. So why not have that in your binagoongan? Makes perfect sense.

The sour taste from the green mango purée complements the salty binagoongan. It has a refreshing feel to it. This dish is perfect with rice.
