BUKO GALETTE
Marries Filipino Buko Pie and French free-form crusty pastry, lemony, buttery dough wrapped around savoury coconut filling topped with sliced almonds and cheese.
On October 28, 2022, we served Buko Galette to a crowd of tourism officers attending the 23rd National Convention of the Association of Tourism Officers of the Philippines at the Sigtuna Hall in Tagaytay International Convention Center, Tagaytay City.
Life was so simple then. Even when we were in a hurry or caught in traffic. Then Coronavirus happened. Life went on a standstill.
We have nowhere to go. Forced and confined in spaces. Now we have the best example of the theory of evolution by Charles Darwin. We have to adjust to our new environment to survive. We have to reinvent ourselves.
Even food had to be reinvented. They too had the time of day. Holed up in our place in Tagaytay, there was a lot of Buko. Drinking its juice helps me. It balances the acidity in my body. But what to do, what to do with the Buko meat? Want not. Waste not. Then I remember Buko Pie, a traditional pasalubong here in the South. I imagined how I like my Buko Pie. Then I mixed some new ingredients to the basic ones with the fresh slices of Buko meat and baked them together in a free-flowing flat, round crusty dough which I borrowed from the recipe of a French galette. Oh, there was a lot of trying. Wishful thinking too. Curious and care-free with so much time, I did not stop until Voila, as the French would say, look there! My very own kind of Buko Pie. To pay tribute to the French, I named it Buko Galette (Buko G!).

In this case the extra ordinary: the pandemic in our midst. I know that others too made a breakthrough. Found means to survive. Buko Galette is a humble homey pie. But it is ageless, timeless, traditional, rustic even. It is our culinary masterpiece for all to enjoy.
People love it. Young and old at any time of the day or night anywhere. Good with a cup of coffee, a small scoop of vanilla ice cream or on its own. Shared with friends, families or even when you are alone. It will keep up with the Juans, the Marias even with the Joneses. Try it. Book with us. Request for it. According to the Philippine Statistics Authority, the Philippines is the world’s second largest producer of coconut products – after Indonesia. As they say, it is more fun in the Philippines. Here and now.
We are a couple living in our own place in Tagaytay. At peace with the world even with the Corona Virus. Comfortable in our cocoon. Happy. Making us feel generous. We also believe that our soul and spirit need nurturing. All the time. Maybe there is still something we can do. We can do more. What if we go back to the venture which made us feel this good? But we are scared. How do we to get back in the game in the midst of the pandemic with all these health protocols? There will be double or triple of the 101 things to do all at once. We need people to feel good about eating once more.
We have our passion for food. Food that captures and bind senses of people. People at their best. With warm or cold shoulders. With hugs, high fives, fist bumps and airy or hot kisses. Maybe older people will come. They want to feel good too. Maybe even those with canes or in wheelchairs. Bless them. Even more blessed are we. As we look back, we remember the lessons, the wins over the losses, tears and struggles, smiles, and laughter. It is a good run for us. Enough to dream. So, we planned and built.
We opened 9001 Kitchen within our own place. Where we are all safe in an open, big space. With pine, cypress, golden yellow bottle brush, citronella, hydrangea, lemon trees, plots of lavender, basil, rosemary, mint, etc. After all, it is a place we call home. Come to think of the other locations where we had Downtown Pizza Pasta, Red Engine Burger, Rekado Atbp, and Hermana. All closed due to the pandemic. Blessings, we call them. They gave us hope. Hope for the good times. Better times. The best is yet to come.
As Pope Francis puts it, “Hope is a virtue of the heart that does not lock itself up, does not dwell in the past, survives in the present and able to see tomorrow.”
Now we put together an assortment of dishes from the menus of our previous outlets. We remember the crowd of foreigners who eat our Red Engine Diner burgers in red buns. Maybe there were some who were not fond of red bread. But hey the burger is 100 percent Angus beef. For the protein alone, you are in a good place. Even then, we always aim to get better. We also remember the rave reviews of Binagoongan Verde in Rekado Atbp and Hermana. Of Downtown Pizza Pasta being featured in Kris TV.
That time was some place in the sun. We are putting ourselves out once more.
As we open our doors, we begin by asking you to try our Buko Galette. It is our newest creation. A pandemic inspired variation of buko pie. We used fresh young buko slices with just the right amount of cheese and crunchy slivers of almond. Baked in a crusty pastry dough called galette which we borrowed from a French recipe. Buko Galette is perfect for the holidays and all year round. It is not too sweet, just fine. Perfect with coffee. Or with ice cream. Try it with yogurt too.

Our Talongganisa is a celebrity in the parade of home-cooked dishes. Common, basic, yet all-time comfort food. We combine shredded longganisa, red and green pepper, roasted skinless eggplant battered in egg and fried in just enough vegetable oil for that inside soft texture but crispy golden on the outside. Garnish with spring onions and white cheese. Perfect with steamed or fried rice. Best for breakfast and lunch. And a winner for dinner. Order our celebrity, chef-speak for our torta. Coffee is food on its own. It has its own story, a very long and interesting history.
Coffee can be light, heavy or balanced as well as creamy, smooth, syrupy, buttery, delicate, complex, thin, weak and black or bitter. There is espresso and decaf. Blends from mocha, cortado, red eye, macchiato, latte, cappuccino. Some Italian blends like ristretto, doppio and lungo. All these from either the Robusta variety or Arabica and a mixture of the two in different ways and proportions. The list is endless. Ad infinitum!

ONCE IN A SUPER BLUE MOON
Fact: The blue moon is a term used to describe the second full moon in a single calendar month. It is a rare event that only occurs every two to three years, hence the popular phrase “once in a blue moon.” This year’s blue moon also coincides with a supermoon, which is when the moon is at its closest point to Earth in its elliptical orbit, appearing larger and brighter than usual.
Now for the interesting part which is all me.
Once in a blue moon means an event or an action which happens very rarely. This August 2023, we are lucky to have a ‘Blue Supermoon’.
I believe in dreams, but they come with effort and responsibility. Like Pine Valley Tagaytay. A big responsibility. But a dream, nonetheless. It is now a reality.
The people who made this happen in and out of the scenes are making a big difference. In all our lives and the lives of people we touch. Everyday. Every time.
